
If you are going to be heading to a few gatherings over the festive season and you want something people will fall over backwards for, praise your goddess abilities and look at you with desire for the rest of your life, this is it.
Please no that all my recipes are created 50% from google or friends and 50% by imagination and what I have available. So far this recipe has been full proof so please excuse my lack of accurate measurements.
You will need a square cake tin or dish
3 med size golden sweet potatoes
6 dried figs and 2 dates (can use all dates if you choose)
1 cup of almond meal
1/2 cup of coconut flour
2 tsp baking powder
3/4 cup cacao powder
1/2 cup carob powder
salt pinch
roughly 1/3 cup of melted coconut oil
Easy peasy
Soak dried fruit in boiling water to cover
steam sweet potato
Measure dry ingredients into bowl
Once sweet potato is cooked until soft blend (blender or food processor) with softened fruit and fruit water until smooth.
Add in to dry ingredients and thoroughly mix, at this point if it is looking too dry and it is hard to mix, to bring it all together I add the coconut oil until it does. It does look like quite a dry mix though.
Press into tin lined with baking paper until flat and even.
Pop into oven of 180 degrees for 30 mins
Test with knife and fingers to feel if cooked through
Leave to cool and then cover with an icing made with coconut oil (approx half cup) and cacao powder (approx half cup) couple of drops wild orange essential oil (from doterra if you happen to have on hand and this is not required) and a little bit of honey or maple syrup all mixed together.
Spread over brownie and refrigerate until icing has set.
